Hi! Here is an extremely simple chicken recipe for your coming weekend........
Ingredients
- 2 large onions
- 3 large cloves of garlic
- juice of one lemon
- 2 bay leaves
- soured cream
- almond paste
- 3 tablespoons refined vegetable oil
- 6 large chicken leg piece
- 1 teaspoon turmeric
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander seed
- 10 cardamom pods
- 1 teaspoon crushed black pepper or red chillies
- 1/4 teaspoon freshly grated nutmeg
- salt to taste
- chicken stalk
- 2 tablespoons fresh mint or coriander leaves, finely chopped
Method
- Put the chicken into a bowl with the soured cream, the lemon juice and crushed black pepper or red chillies.
- Leave to marinate for about 2 to 3 hours.
- Peel and finely chop the onions and the garlic and fry gently in the oil.
- Add all the other spices.
- Add the almond paste.
- Keep on frying continuously on low heat, stirring all the time for a few more minutes.
- Add the chicken with the marinade.
- Fry chicken on low flame for few minutes.
- Add the stock and bring to the boil.
- Cover and cook till the chicken is tender and cooked and the sauce is reduced and thick.
- Remove bay leaf.
- Serve sprinkled with the fresh mint or coriander, accompanied with boiled rice.
